City staycations are the way forward in life – as a new working mum, the heartstrings only permit me to travel certain distances sans bub. Thankfully, a cheeky mid week overnight escape into Sydney’s CBD is well within the emotional perimeter, so bring on a night of selfish indulgence.
Smack bang in the beating heart of the CBD, Establishment Hotel is neatly tucked away in a brick lined back alley – a fitting locale to set the modern industrial tone which permeates the space. The sleek lobby, smattered with marble and velvet and the fine art touches throughout elevate Establishment to the elegant end of the industrial spectrum.
In true Merivale style a stay here is really a one stop shop – all you could want in the drinking, dining and dancing category – and when you have hit maximum cocktail, they offer a super stylish place to rest your weary head and full belly. From their established favourites in Hemmesphere cocktail lounge, sushi e and Establishment Bar and Garden through to newer additions Palmer & Co and Mr Wong, it’s a choose-your-own-adventure scenario, albeit one laced with incredible cocktails, plush decor and an on-point soundtrack no matter which path you choose.
For my big night in/out, I’m all mums-gone-mild, with cocktails and dinner at sushi e… a suitably sexy venue dimly lit enough to mask the most tired of dark circles. Faultless in every sense, the standards are set to incredible highs from the cocktail alchemy to the knife skills of the sushi chefs – it’s one flavour bomb after the other with impeccable service to match. The recommended Snapper and white soy sashimi was an absolute highlight as was the Lotus Blossom cocktail – yuzu meets champagne meets wasabi in a perfect palette cleanser. Sitting at the giant marble slab of a sushi bar – it’s intimate and understated, attracting a well-heeled mix of first dates, hip hotties and company credit big card spenders.
Sashimi’d to the brim, a plush bed and crisp sheets await in a generously sized room. With a separate sitting area, ample storage and elevated bed platform, the buildings’ 1890’s origins are on display with the old warehouse beams fully exposed. A touch of glam is revealed by the foldaway partition which exposes a stately head to toe marble bathroom, complete with deep bath.
After a solid night of eating the first thing to worry about upon waking up is breakfast, of course, and here it’s no small affair. Ducking through an internal door of the hotel to pop out in The Garden at the back of Establishment Bar, is like an Alice in Wonderland moment – by day the space is truly transformed; original brick walls on display with daylight abounding through the modern glass casing. It’s gloriously green and alive, and endlessly tall ceilings are accentuated with lanky bamboo and sculptural pendant lights hanging from above.
The breakfast clientele perfectly illustrate Establishment’s anything goes appeal – dusty headed hipsters, suited up sirs and fashionable friends all sit comfortably side by side in surrounds with clearly mass appeal. A must-stay for anyone looking for the buzz of the CBD with an expert level of hospitality perfected only by Merivale.
